Chocolate Chip Cherry Bar
Want a healthy snack that is easy to make, even with a screaming toddler pulling at your leg? I’m not an Olympic star by any means, but making anything with a cranky toddler seems to be quite the feat. What should take thirty minutes can easily turn into an hour and a half, on a good day. It’s moments like these that I really want to turn around and just grab something premade, probably fully processed with of a ton of junk I really don’t want my family to consume.
So grab your food processor and throw a few simple ingredients in to make a snack that your entire family will enjoy. This recipe combines raw almonds, dried cherries, dates and dark chocolate chips. The flavors are truly indulgent and pack a wholesome punch, with each bar containing less than 200 calories. Did I mention that they taste like dessert?
- 1 Cup - Raw Almonds
- 1 Cup - Dates
- 3/4 Cup - Dried Cherries
- 3/4 Cup - Dark Chocolate Chips
- Place the almonds, dates and cherries in the food processor and mix until a sticky, workable dough forms. You can test it by taking some of the ingredients and form a ball, if it holds its shape, you're good to go.
- Add in the chocolate chips and pulse it until combined. Do not over mix it. Pour ingredients onto a cutting board and press them into a rectangle shape about .5-inch high. Cut into 6 equal sized bars about 4-5-inches by 1-inch. Wrap with parchment paper and store them into an airtight container up to a month.
