Or how about the Do-It-Yourself project that looks really easy, but it only took you twice the amount of time, and a few visits to the ER? Ok, maybe not ER, but I am a klutz so it is a very good possibility.
Every Tuesday I will be testing out recipes and DIY projects that I find online. Whether it is things pinned on Pinterest, found from other bloggers, or videos shared on Facebook, I will be sharing my personal experience on trying to recreate them. Twisted Tuesday 1: Autumn Arugula Salad with Caramelized Squash, Spiced Pecans and Pomegranate Ginger Vinaigrette
After stuffing my face with too much turkey, mashed potatoes and stuffing, I’ve decided it was time to ring in the holiday season with something a bit healthier. What can be healthier than a salad, right? By combining fresh arils from pomegranates, warm toasted pecans with a bit of fall essence and caramelized acorn squash, this salad makes me want to jump for joy. Did I mention that the ginger in the dressing adds an amazing freshness that tantalizes the taste buds?
Boy was I excited try this recipe and I was not disappointed. There are however a few things I would like to try next time I make this:
- Use dried cranberries in place of the pomegranates
- Replace the pomegranate juice in the dressing for apple cider and reduce it to ¼ cup
- I used a spring mix for the lettuce verses arugula
- Add chopped apples sprinkled with cinnamon
- Use toasted pecans without the pumpkin pie spice
